This salad is seriously delicious. I love the meatiness of the falafel and the smoky bacon. The beetroot really freshens the salad up and the goats cheese adds a yummy tangy flavour to the dish. The Beerenberg Taka Tala dressing is fantastic, but if you can’t find it, a tahini dressing would also be lovely (to make one, shake up 1/2 cup tahini, 2tbsp yoghurt, 2 tbsp lemon juice). Falafel Salad (serves 1)
- 50g Baby Spinach
- 50g Falafel
- 50g Baby Beetroot
- 2 Rashers of Bacon (or ‘facon’ if that takes your fancy)
- 25g Goats Cheese
- 1 tbsp Beerenberg Taka Tala Dressing
Cook up the bacon and slice finely. Cut the falafel into thin slices and heat in a frypan. Slice up the beetroot. Then toss together the baby spinach, falafel slices, baby beetroot slices and the bacon with the salad dressing. Top with some crumbled goats cheese and enjoy!
