Cooking Corner – Speedy Salad

Salads might just be the easiest and quickest meal to whip up. This summer I’ve been loving mixed leaf salads with balsamic dressing. I love that they work well with almost anything you have in the fridge or pantry. Some of my favourite additions are chickpeas, roasted sweet potato, roasted beetroot and feta cheese. But, today I’m having mine with baby bocconcini and ‘facon’ (even my carnivorous boyfriend can’t resist sneaking a couple of rashers!). If you are of the meat-eating persuasion, you can substitute the real deal.

This salad is so easy that it probably doesn’t even need a recipe, but here’s one anyway:

Speedy Salad  (Serves 1) – 304 Calories

  • 55g Mixed Lettuce Leaves
  • 90g Baby Bocconcini
  • 3 Rashers of Bacon (or ‘facon’ if that takes your fancy)
  • 1 tbsp Light Balsamic Vinegar

Cook your bacon rashers, and cut into small squares. Wash and tear the lettuce into bite sized pieces. Halve the bocconcini and add into the salad along with the bacon bits. Pour over the balsamic vinegar and toss the salad. Enjoy!
